It’s Vegas Baby! Casino Party Cookies, Cake Pops, and Cupcakes

I did these back in April and never had time to write a post. I was asked to come up with a dessert for my school’s annual fundraiser, the theme was “Night in Vegas.”  We initially considered doing cookies made to look like poker chips and playing cards along with cake pops, but finally decided on poker chip cookies and cupcakes with a red/white/black color scheme (see pictures at the end taken at the event).

The cupcakes were double chocolate cake filled with salted caramel and iced with a vanilla-bean buttercream swirl with red/white sprinkles.  The sugar cookies were iced with fresh lemon royal icing and a fondant circle in the center.

It was a terrific party and a great fundraiser for the school.  Many kudos to the committee who worked tirelessly to organize it all…great job, HFS Reverse Raffle team!!  I was proud to be a part of it!

Cardinal Mooney and University Of Dayton Graduation Cakes

A friend asked me to do 2 graduation cakes for her daughter’s high school graduation…one cake representing the school she was leaving and a smaller one representing the college she would be attending (with hopes that she’d also be graduating from there in 4 years…very clever, Mom!).

The larger Cardinal Mooney cake was a half-sheet 2-layer cake (double chocolate/sour cream almond), filled with chocolate mousse and iced with vanilla-bean buttercream. The school logo and other decorations were homemade fondant. Since the day was incredibly hot and humid and it was an outdoor party, I’d had the cake in the freezer for a few hours, hoping to firm it up so it would hold up to the heat (you can see from the pictures that it was “sweating” a bit when I got it out).

The smaller University of Dayton cake was a 10-inch round chocolate layer cake filled with chocolate mousse and iced with vanilla-bean buttercream with fondant decorations.  I did the UD logo with 3 layers of fondant to give a 3-D effect.  Unfortunately, this one I didn’t have in the freezer and it subsequently didn’t hold up to the heat and had to be taken into the air-conditioned house to be served (she said it still tasted great none the less :0).

Pink Rose Swirls and Pony Birthday Party

My daughter once again picked a pony theme for her birthday, but this year the color of choice was pink….finally!  Last year I’d already purchased all of the decorations…in pink…when I was informed by my darling daughter that “blue is the new pink, Mom!”  (See last year’s blue ombré pony cake.)  Who knew a 6-yr-old could be so opinionated?!  This year I finally got to do the vintage pink pony party I’d planned.

I wanted the cake to be pink and frilly…My daughter was insistent that the pony on top be “jumping,” a specialty cake-topper which turned out to be terribly difficult to find. The bottom tier was an 8″ 3-layer round covered in pink ombré buttercream roses piped with larger swirls in darker pink at the bottom, graduating up to smaller, lighter-pink swirls at the top. The top tier was a 6-inch round iced smooth in pink buttercream. The ponies, ribbon, and name circles were cut from pink, white, and brown homemade marshmallow fondant.

The sweets table offered up cookies monogrammed with the birthday girl’s initial and birthday, pink and brown iced cupcakes, and Rice Krispie “hay bales.” Iced pony-shaped cookies were given as party favors to each child.

It was a great party with games and 2 ponies this year….and lovely weather, which was my biggest concern in planning it.

Happy birthday, my sweet, sweet cowgirl!  Pink is most definitely your color!

About Me

Life is crazy and I love to bake. I'm a wife, mother of 3 nutty kids, and an admitted sugar-holic. Ten years ago I left my job as a senior consulting engineer in Salt Lake City, UT, to get out of the rat race and raise kids. We up and moved to a quiet, small town in NE Ohio to be near family and bought a 180-yr-old historic home, always a dream of mine. Along the way, I discovered my joy of baking, which allows both my engineering side and my oft-suppressed creative side to emerge. It began with the desire to bake birthday cakes for my kids (I hated to buy them) and has blossomed into a cupcake-baking business for a local bakery. Over the years, many people have asked if I take orders. So, here they are. Check out the site, we'll be adding new cupcake flavors weekly as well as the occasional cake. And in case you're wondering about the name, it's an homage to the big, old gray barn in my back yard. What a bonus, it came with the house! Put on a smile and BAKE!
