Disney Infinity Birthday Cake

Disney Infinity, homemade marshmallow fondant, Key lime cake, lime buttercream

I  have to admit, I didn’t know much about Disney Infinity when my client called to ask me to make a cake for her son’s birthday.  Actually, I knew nothing.  My kids really aren’t into Disney anymore, so I though this was a new Disney movie I just hadn’t heard of yet.

S, I googled it and the search kept coming up with all of the characters I already knew….Toy Story, Cars, even Nemo.  What???  It took some research and my kids enlightening me to figure out it was a new video game!

Since my client wanted to use her son’s game pieces on the top of the cake, I googled the game console and logo and cut them out by hand from red, black and gray fondant in a size to fit the 10″ key lime cake, iced with lime buttercream. I also added red and black stars of different sizes and a name plate and happy birthday sign with letters cut using my Wilton small letter cutter set. The icing and filling are lime buttercream (made from silky Swiss meringue buttercream flavored with fresh lime curd).

This was a fun cake to make and I now know all about Disney Infinity!

Happy birthday, Luca, hope it was a great one!

Tiered Rosette Wedding Cake

A lovely bride-to-be came to me last spring to order a cake for her summer wedding.  She wanted the cake to reflect her beautifully designed wedding dress with a skirt of soft, rosette shaped ruffles.

After discussing a fondant rosette cake, she decided on a 3-tiered cake covered with buttercream rosettes (she also needed 2 half-sheet cutting cakes to provide enough servings for her guests).

The main cake is 3-tiered (12-9-6″).  The top and bottom tiers have 3-layers each and the middle 9″-tier has 4-layers, just to add some interest in height. Each tier has alternating double-chocolate and white velvet cakes and salted caramel cream filling.  The icing is an ivory vanilla-bean buttercream.

After a crumb coat of silky buttercream, I added the rosettes with a Wilton 1M tip.  The icing was a mix of sweeter, stiffer American buttercream and less-sweet, silky Swiss meringue buttercream…I decided this was the perfect combo to give the icing the creaminess and stability I wanted for the rosettes to be nice and smooth AND to hold their shape in the July heat.

Although the cake isn’t all that big (12″ base cake and about 17″ tall), it got surprisingly HEAVY very quickly with all of that buttercream!  Once it was finished, it was all I could do to move it into my fridge!

rosette-wedding-cake-9The cutting cakes were 2-layers each, same flavors as the main cake.  I added a rosette border around the top to mirror the theme and did a rough ice on the sides for a rustic look.

The monogram topper was added at the venue.

Notice the awesome meatball cake pops in the foreground!  This was a surprise for the groom, who LOVES meatballs :0)!

Congratulations, Erica and Chris!  It was a pleasure to be part of your special day!

WWE-Themed Groom’s Cake

Who doesn’t love WWE wrestling? Especially for a wedding?!

I made this WWE-inspired cake for a wedding some months ago…Apparently the groom was a wresting fan and the bride wanted to surprise him with this groom’s cake for their big day.  The cake is a 3-layer 10″ diameter chocolate cake, buttercream iced with the WWE logo made from homemade marshmallow fondant. The family provided the topper and the wresting ring. Too funny! Reports say: “The groom thought it was the best thing about the wedding!” Not sure if that’s true, but it makes me smile that the couple had a little fun with it :0)

Sports-Themed Graduation Cakes

I have a wonderful client who’s ordered many cakes, cupcakes and cookies from me in the past few years.  This last spring, she came to me with an order for her son’s graduation party…3 cakes with a football theme.  She sent me a picture of a cake display of 3 cakes showing a graduation cap, a jersey and a football. sports-football-graduation-cakes-2 So I got to work… The football I made from chocolate cake with raspberry filling baked in a Wilton football-shaped pan.  I smooth iced it with chocolate buttercream…then when it had crusted a bit, pressed a textured paper towel over it to give it that “pigskin-like” look. The letters, stripes and seams are homemade marshmallow fondant.  The letters I cut with cutters I had from a cookie making kit, the stripes with this neat-o Sugarcraft ribbon cutter like this one, and the stitching I made with a  Walnut Hollow clay extruder I got just for this order (but have used a bunch since). sports-football-graduation-cakes-3 sports-football-graduation-cakes-6 The graduation cap was a 6″ banana cake filled with bavarian cream filling.  I cut an 8″ square out of stiff cardboard and covered it with homemade fondant colored blue, added tassels made from blue fondant (again, extruded with my neat-o extruder) and a button on top. The cake is iced with blue vanilla buttercream colored to match the fondant.  The letters and numbers are cut from white fondant with these easy-to-use Wilton letter cutters. sports-football-graduation-cakes-9 sports-football-graduation-cakes-7 sports-football-graduation-cakes-4The jersey is made from a half-sheet pineapple mandarin cake (sometimes referred to as Hummingbird cake) with a pineapple cream filling.  I cut it to resemble a jersey with a template I made from cardboard.  It’s iced with the same blue buttercream as the cap and the letters are cut with the same cutters as on the football.  The “22” I hand cut using a template with a “collegiate font” to look more like sports numbers.

I put the cakes on separate boards for ease of handling and transport.  The larger board is a foam-core board I covered with blue poster board. The congrats message on the board I cut using Tappit Funky Letter cutters, glued down with a little piping gel. That’s about it!  Hope you had a great party, Nicke, I sure had fun making your cakes! sports-football-graduation-cakes-1

Sports-Themed Baby Shower Cupcakes

banana cake, homemade marshmallow fondant, sports balls, sports themed shower, vanilla-bean frosting

A darling friend asked me to make sports-themed cupcakes for her baby shower brunch this past spring. Her husband was a sports star in high school, so this was an appropriate theme for their first baby, a boy due sometime this month :0)

These cupcakes were banana cake with vanilla-bean buttercream. I cut sports balls out of homemade marshmallow fondant and piped details on with royal icing.  They were packaged for the shower in clear plastic cups and glassine bags tied with silk ribbons.

I added the second “It’s a Boy!” cupcake liner after they were baked to make sure the image and blue stripes stayed clear.boys-sports-cupcakes-baby-reveal-6

These were sure fun to make and it was great to practice with a few of my new sports fondant cutters.

Good luck with the new baby, Carolyn! Thanks for letting me be a part of your special day!

About Me

Life is crazy and I love to bake. I'm a wife, mother of 3 nutty kids, and an admitted sugar-holic. Ten years ago I left my job as a senior consulting engineer in Salt Lake City, UT, to get out of the rat race and raise kids. We up and moved to a quiet, small town in NE Ohio to be near family and bought a 180-yr-old historic home, always a dream of mine. Along the way, I discovered my joy of baking, which allows both my engineering side and my oft-suppressed creative side to emerge. It began with the desire to bake birthday cakes for my kids (I hated to buy them) and has blossomed into a cupcake-baking business for a local bakery. Over the years, many people have asked if I take orders. So, here they are. Check out the site, we'll be adding new cupcake flavors weekly as well as the occasional cake. And in case you're wondering about the name, it's an homage to the big, old gray barn in my back yard. What a bonus, it came with the house! Put on a smile and BAKE!
