This cake I made for a birthday celebration this past summer for a good friend whose kids were having a combined birthday party. Their mom wanted a festive cake with primary colors, decorated with stripes and circles. It’s a 2-layer, 12×18″ cake that feeds about 65 people, filled with chocolate mousse and buttercream-iced with fondant decorations. Hope you had a happy birthday, Nick and Katie…We sure had fun at your party!!

I made this for a New Year’s birthday party, but this basket-weave cake is perfect for any celebration where you’d like an elegant presentation. It’s 3-layers of sour cream almond cake, filled with chocolate mousse and iced with chocolate buttercream then topped with chocolate-covered strawberries and tiny fondant flowers. It can be done with any flavor cake, icing and filling to fit your occasion.

This cake I made for a basketball enthusiast who turned 12 this past month. He wanted a basketball-themed cake with Cavaliers’ colors. As his mom didn’t specify a design, I wanted to do something with a little of everything…basketball, jersey, logo, and (of course) stars for his birthday (and because he’s a STAR basketball player on his 6th grade team!).

The cake is a 10″ round, 3 layer chocolate-vanilla marble with cookies+cream filling and iced with vanilla buttercream. The basketball is made from cake baked in a domed cake pan and covered with orange homemade marshmallow fondant and black stripes. The jersey is hand-cut fondant trimmed with Cavalier’s colors, as is the logo.
