Minecraft Cake 2.0

My most popular cake to date…who knew?   When I created this design back in February, I had no idea it would become such a huge hit!  Since then, I’ve revised the figures a bit and replaced the fondant top with buttercream, but essentially it’s the same double-chocolate 3-layer cake (or pick your favorite flavor) covered with creamy chocolate buttercream and crushed Oreo cookies. The Minecraft figures on top are made from homemade fondant; the “Minecraft” sign and pick ax are perler beads.

For all of you Minecraft-crazed youth out there….”The Creepers are HERE!  But BEWARE.. HEROBRINE is coming!” (keep watching for version 2.1 ;0).

Pumpkin Pie Spice Cupcake

This cupcake is a must for Fall when those happy, hearty pumpkins start showing up at every grocery store and farm stand…Nothing beats the smell of fragrant pumpkin spice cake in the oven on a crisp Fall day. This one is filled with a creamy vanilla mousse and topped with luscious cinnamon-clove cream cheese icing and topped with a sprinkling of toasted pecans (why not?!). Pumpkin pie in a cupcake….only better (in my opinion).

Caramel Apple Pie

It’s FALL!  By far my favorite time of year!  Well, not “by far”… but maybe a smidgin above Spring.  And Fall just happens to be my dear Hubby’s birthday season.  I surprised him at work with the quintessential fall cupcakes, reminiscent of cool days, blowing leaves, juicy apples….and, of course, creamy caramel…mmmmmm.

I baked up a batch of moist brown sugar cakes…nothing beats brown sugar to give a deep, rich flavor to any cake.  Then I used fresh apples, cinnamon, and more brown sugar to make a sweet and buttery apple pie filling….and then mixed in some homemade caramel sauce, just for good measure. After squeezing as much juicy filling as I could into each cupcake, I topped them all off with a swirl of cinnamon-caramel buttercream and a dash of cinnamon.   Soooooo good!  Welcome back, Fall…I missed you.caramel-apple-pie-cupcakes-6

Salted Caramel Cupcake

Salted caramel is all the rage, and oh-so-good when made into a cupcake! These are rich, moist brown sugar cuppies filled with a sweet, salty caramel cream. They’re crowned with a rich swirl of decadent salted caramel buttercream and topped with…yes, wait for it…more caramel! Then a sprinkle of sea salt.  Sweet and salty, what better combo?!

Pink Champagne and Raspberries

The daughter of  a good friend recently got married and I was asked to do some minis for her cookie table.  For those of you not in northeast Ohio, you may not have ever heard of a “cookie table” (I know I hadn’t until I moved here), but it’s a thing at most weddings and graduation parties around here.  Friends and family members load a giant table at the reception with all sorts of traditional cookies and sweets in honor of the celebrant.

The bride asked me to make these delicate pink champagne minis…A raspberry-champagne flavored cake filled with fresh raspberry puree and topped with a creamy swirl of Swiss meringue buttercream flavored with raspberry and a hint of champagne.  The one small mouthful is a combo of tart, sweet, creamy, smooth…heavenly!  I added a few pink pearls in honor of the beautiful bride….and you were, Gina!  Congrats to you and Mark!!

About Me

Life is crazy and I love to bake. I'm a wife, mother of 3 nutty kids, and an admitted sugar-holic. Ten years ago I left my job as a senior consulting engineer in Salt Lake City, UT, to get out of the rat race and raise kids. We up and moved to a quiet, small town in NE Ohio to be near family and bought a 180-yr-old historic home, always a dream of mine. Along the way, I discovered my joy of baking, which allows both my engineering side and my oft-suppressed creative side to emerge. It began with the desire to bake birthday cakes for my kids (I hated to buy them) and has blossomed into a cupcake-baking business for a local bakery. Over the years, many people have asked if I take orders. So, here they are. Check out the site, we'll be adding new cupcake flavors weekly as well as the occasional cake. And in case you're wondering about the name, it's an homage to the big, old gray barn in my back yard. What a bonus, it came with the house! Put on a smile and BAKE!
