Since I believe tart lemon is one one the best flavors God created, these lemon meringue pie cupcakes are one of my favorites.  I’m not much of a pie baker, but one of my most cherished memories of my mom is her lemon meringue pie.  So I created these cuppies to conjure up that memory.

A fragrant lemon cake is filled with tangy lemon curd mixed with a hint of sweet whipped cream to make almost a mousse.  Then more lemon curd is folded into the velvety cream cheese frosting and dolloped on top with a sprinkling of sanding sugar.  The bride I made these for included these on her cookie table along with the pink champagne minis (see “Pink Champagne and Raspberries” post)….yum!  And I ate a few and thought of my mom….

Stella and Dot Party Mini Cupcakes

My friend had a “Stella & Dot” cupcake and wine party and asked me to make mini cupcakes for the event.  She chose an almond sour cream cake with lemon curd and lemon buttercream (white swirls) and double chocolate cake with caramel and caramel buttercream (S&D iconic blue swirls).  Since minis are virtually impossible to “fill,” I simply mounded a dollop of the filling on top of each cake before swirling on the buttercream.  The filling added just the right dimension to the already richly-flavored cake. Poppy Lemon Zingers

Poppy Lemon Zinger Cupcakes

Spring is right around the corner and I’m ready to add a little sunshine to my day.  Thus the creation of these Poppy Lemon Zingers!  I started with a poppy seed lemon cake and filled them with a tart lemon curd–perhaps my favorite flavor.  They are topped with a creamy vanilla-lemon flavored buttercream frosting.  It took almost a pound of lemons (juice and zest) to make these babies, really tart and yummy….!

About Me

Life is crazy and I love to bake. I'm a wife, mother of 3 nutty kids, and an admitted sugar-holic. Ten years ago I left my job as a senior consulting engineer in Salt Lake City, UT, to get out of the rat race and raise kids. We up and moved to a quiet, small town in NE Ohio to be near family and bought a 180-yr-old historic home, always a dream of mine. Along the way, I discovered my joy of baking, which allows both my engineering side and my oft-suppressed creative side to emerge. It began with the desire to bake birthday cakes for my kids (I hated to buy them) and has blossomed into a cupcake-baking business for a local bakery. Over the years, many people have asked if I take orders. So, here they are. Check out the site, we'll be adding new cupcake flavors weekly as well as the occasional cake. And in case you're wondering about the name, it's an homage to the big, old gray barn in my back yard. What a bonus, it came with the house! Put on a smile and BAKE!
