The daughter of a good friend recently got married and I was asked to do some minis for her cookie table. For those of you not in northeast Ohio, you may not have ever heard of a “cookie table” (I know I hadn’t until I moved here), but it’s a thing at most weddings and graduation parties around here. Friends and family members load a giant table at the reception with all sorts of traditional cookies and sweets in honor of the celebrant.
The bride asked me to make these delicate pink champagne minis…A raspberry-champagne flavored cake filled with fresh raspberry puree and topped with a creamy swirl of Swiss meringue buttercream flavored with raspberry and a hint of champagne. The one small mouthful is a combo of tart, sweet, creamy, smooth…heavenly! I added a few pink pearls in honor of the beautiful bride….and you were, Gina! Congrats to you and Mark!!
