A friend asked me to make some simple cupcakes for her teen-aged son’s birthday…he requested simple, no frills chocolate cupcakes. He was going to be on a Boy Scout camping trip and she wanted to surprise him with the cupcakes the second night of the sleepover. We decided the best way to keep them fresh was to freeze them firm and send them frozen. Then when the boys were ready to celebrate, the cupcakes in the cooler were thawed and just right. These are decadent double-chocolate cupcakes with almond Swiss meringue buttercream and sprinkles…and a tiny “cherry” on top. They traveled perfectly and the Scouts were thrilled with the special treat!
