With an abundance of Oreo cookies in our house at the moment, I’ve been looking for a good cupcake recipe to use them up.  I think I found one!  I mixed up a batch of  decadent double-chocolate cupcakes with an Oreo cookie baked right in.

I managed to find a little more room inside for rich chocolate mousse and frosted them with vanilla-bean buttercream frosting mixed with crushed cookies.  An extra cookie on top makes them my kids’ favorite so far.  So much chocolate, so little time…Where’s the milk?!
